Product information: Ajvar or Red Pepper Caviar is the classic - and utterly delicious - red pepper and eggplants relish from the Balkans. Originally from Macedonia it become popular throughout the Balkans. Throughout the years, different geographical regions developed their own Ajvar recipes. Today modified recipes for making Ajvar may include garlic, tomatoes, vinegar, sugar etc. With the increasing demand for this vegetable relish, the industrial version of Ajvar appeared. The industrial version of the Ajvar is made by using large cooking pots or pressure cookers in which the peppers are usually roasted on gas, and are boiled, instead of fried as in the original homemade recipe. The industrialized methods lead to a much poorer quality of the product. This industrial version of the Ajvar is actually available for the brother consumer's population, while the joy of homemade Ajvar is available only for a small number of people, which know families that prepare homemade Ajvar in Macedonia and South Serbia.
We have decided to change this and make the original Macedonian Ajvar prepared by a traditional recipe with the exact homemade taste available for our customers. To achieve this we use traditional artisan processing and gentle craft preparation methods which include:

Cooking the Ajvar only in small cooking pots in batches not bigger than 60 kg
Frying the Ajvar in organic cold pressed sunflower oil.
Use: Ajvar is a tasty and aromatic vegetable mixture to be eaten in various ways. Traditionally, Ajvar is eaten in a simple manner, namely spread on a piece of country-style white bread with white cheese.
